Vegetables mainly eaten by the peasants were Artichokes, Asparagus, Aubergine (Eggplant), Beans, Beetroot, Cabbage, Cardoons, Carrots, Catmint, Celery, Chickpeas, and Cucumber.

Also included were Endive, European Gourds, Fennel, Garlic, Leeks, Lentils, Lettuce, Mallow, Melon, Onions, Orache, Parsley, Parsnips, Peas, Shallot, Smyrnium Olusatrum, Tansy, and Watercress. The only vegetables which were eaten by the higher class were Onions, Garlic, and Leeks.
